My husband’s ex-wife recently gave us the most gigantic bag of produce I’ve ever seen. She had just hosted her out-of-state mom who cooks a lot, but she was headed out of town herself soon and didn’t want it to go to waste. She thought of us and said we’d know what to do with all of the leftover goodies her mom had purchased while visiting. How sweet?!
My favorite meal I made from her generosity was consumed on a “late night date night in” – a bok choy salad, including grilled chicken and clover sprouts. The sprouts and chopped bok choy were already waiting in the fridge, from my prep day earlier in week. I chopped up some green onions and added it to the pile of greens. I browned almonds, sesame seeds, and crushed ramen on the stove in butter. I used a mixture of soy sauce, sugar, olive oil, and red wine vinegar for the dressing.
We lit some candles and enjoyed a quiet dinner after the kids went to bed. Blissful!
