Several of you asked for the recipe, so I thought I’d throw it on here.
Thanks for the positive feedback… it was a total gamble.
As you can see on the board, Tuesday called for turnip fries. I thought I’d seen turnips in the giant bag of goodness the boys’ mom sent our way. Later on, though, I discovered they were beets instead. Oops. Beet fries, y’all?
Me: You’re not getting Ames’ potty in these shots, right?
Chris: Of course not.
BEET FRIES
What You Need:
Beets (we used eight or so)
Garlic powder
Salt & Pepper
Olive Oil
Parmesan cheese
To Prepare:
Slice beets up into and transfer to a bowl. Stir in garlic powder, salt, pepper, olive oil, and Parmesan. I never measure this stuff, sorry! Go with your gut! When beets are coated evenly, spread onto cookie sheet covered with aluminum foil or parchment paper. Bake in the oven at 425 degrees for almost an hour… we only did thirty minutes or so, and they were still a bit soft. Next time I’ll set the timer for forty-five.
Chris put IJ in character, since she loved them so much. Baby Babushka!

I just can’t get myself to like beets, but my girls and husband love them. I think I’ll be making these when the beets come up in the garden.
I don’t like them the traditional way, either. Maybe the drying helped because these were delicious!

beet fries! i love it. we eat tons of beets around here. and the kids love them.
Oh my goodness, these look delicious! We love sweet potato fries in our house, but beet fries? Oh yeah baby, will be trying this out! Thanks for the gamble recipe (they are usually the best ones)!
